stocked pantryIn preparation for the WLC, I’ve been stocking the pantry.

It’s not always easy to find compliant staples – canned tomatoes, chicken stock, coconut milk, tomato paste, tuna, curry paste, olives, peppers, whatnots.  So I started heading out to grocery stores, just to stock up on some basics.  Here’s hoping a pantry full of stuff I *can* eat will be inspiring.

Some favorite wins from Trader Joes are plantain chips and salsa.  They also have compliant sweet potato chips.

Compliant bacon is so hard to find, but at Ralphs, I found some prosciutto that will work nicely with some sautéed brussels sprouts.  And it turns out that all of Rao’s tomato sauces are compliant, except the vodka sauce.  That will be delicious with some chicken or ground beef and some veggies.
